Our signature brownies have a dense, moist crumb and a crispy crust. We've folded in roasted cacao nibs, the heart of the cacao seed from which we make our chocolate. This adds the texture of nuts, while keeping the flavor all chocolate.
Our Chocolate Covered Espresso Beans have been a long-standing French Broad Chocolate favorite. The coffee from our friends at Methodical Coffee are a blend of beans from La Pastora, Costa Rica, and Ixlama, Guatemala. The Costa Rican coffee comes from the Coope Tarrazu cooperative group in the San Jose province of Costa Rica, representing over 3,500 partners in the province and committed to the welfare of those partners and their communities. The Guatemalan beans are the culmination of work by over 100 family producers in the Guatemalan municipalities of San Pedro Necta and La Libertad in the department of Huehuetenango, a region known for rugged landscapes and high elevation. The beans are the perfect vehicle for our handcrafted chocolate and the perfect snack for nibbling at home, sharing with your favorites, or keeping all to yourself.
Our 28g Costa Rica 80% chocolate bar connects us deeply to our roots. Dan & Jael lived in the cacao-rich jungles of Costa Rica for two years, where they opened a small café, called Bread & Chocolate. Daniel South was brought on as a dishwasher, eventually being trained as Head Baker. Now Daniel has returned to his agricultural roots as a cacao processor, cultivating cacao on his farm and buying the seeds from his neighbors. He ferments in wooden boxes made from trees felled on his land, and exports cacao directly to French Broad Chocolate. This two-ingredient chocolate has an earthy aroma with a flavor profile ranging from chocolate wafer cookie and transforms into tart raspberry.
Lastly, our 28g Guatemala 73% chocolate bar offers flavors of concord grape, fresh-baked brownies, and almond butter. The cacao contained in this special bar comes from deep in the foothills of northern Guatemala in the village of Rocjá Pomtilá, a settlement of Maya Q’eqchi’ who cultivate cacao, cardamom, and maize. Their cacao has only recently become commercially available, thanks to the efforts of a truly extraordinary organization, Uncommon Cacao. The audacious proposition of Uncommon Cacao is that with education, organization and fair treatment, the cacao farmers can substantially improve their livelihoods.
